Vegetarian Mabo Squash

Vegetarian Golden
Fried Rice

Ingredients
1 zucchini, sliced into round pieces
1 yellow squash, sliced into round pieces
5 small garlic cloves, finely chopped
1 tablespoon of black bean paste
1 teaspoon of red pepper flakes
1 teaspoon of soy sauce
1 teaspoon of olive oil
5 slices of banana pepper for garnish
Ingredients
2 eggs
1.5 cups of cooked rice
2 Roma tomatoes or 1 big tomato variety
1 broccoli
0.5 cup of chopped onions
1 spring onion
1 teaspoon of soy sauce
3 teaspoons of olive oil

Directions

The cutting, slicing, and chopping: After washing the ingredients, slice the zucchini and yellow squash into round pieces. Finely chop garlic cloves into small pieces

Optional: Lightly the zucchini and yellow squash with a little soy sauce or salt first for a softer texture

Heat a pan. When a pan is heated, lightly stir-fry the vegetables on medium heat with olive oil. As the vegetables are being lightly stir-fried, slowly add black bean paste, soy sauce, garlic, and red pepper flakes.

Plating: Plate the vegetables circularly from the center outwards in a clock-wise motion.

Garnish with banana peppers, either sliced or chopped according to your own preferences!

Cook 1 cup of rice in a rice cooker. Let cool. Refrigerate overnight. Take out the day of making fried rice and leave in room temperature for an hour.

Separate the egg yolks and egg whites. Coat the cooked rice with egg yolks and fluff with a fork or massage the rice with gloved hands.

After washing the broccoli, cut the stems (do save the stems for a pickled side dish or a soup dish!) Cut the rest of the broccoli into floral pieces and lightly boil.

Heat a pan. When a pan is heated, begin stir-frying the rice with olive oil. Slowly add chopped onions. As the pan starts having a beating sound or a few of the rice pieces start jumping slightly on the pan, spread the rice on the sides of the pan, leaving the center open, add the egg whites. When the egg whites began to form shape, blend with the rest of the rice by stirring constantly. Add tomatoes and blend. The golden fried rice is done!

Garnish with finely cut spring onions.
